Ingredients

1 can (796 mL) crushed tomatoes
2 Tbsp. Mexican Fiesta Rub & Seasoning
4 large tortilla shells
3 chicken breasts, cooked and shredded or use a deli rotisserie chicken
(3-4 cups cooked)
3 cups shredded Mexican blend cheese
Cherry tomatoes
Toppings of your choosing

Instructions

Preheat oven to 375°F. In small bowl, combine crushed tomatoes and Mexican Fiesta Rub & Seasoning to make a sauce. Spread 1/3 cup of sauce in the bottom of a greased 10.5" springform pan. Place 1 tortilla in pan over sauce, then
top with ¾ cup sauce, 1/3 of the chicken
and ¾ cup cheese. Repeat layers ending
with 1 tortilla, sauce and 1 cup cheese.
Cover with aluminum foil and bake for
30 minutes. Remove foil and continue
baking 15-20 minutes or until cheese is
melted and sauce is bubbly. Let rest for
10 minutes before serving. Top with fresh
from the garden cherry tomatoes. Garnish
with any other favourite toppings.
